It’s my favorite day!…but I need tomorrow to be over because that means I’m done with labs for the week and I spent 5 hours in lab yesterday and was highly unsuccessful and therefore am completely over labs right now.
Errr, that took an unexpected turn. Let’s get back to happier topics, shall we?
There are four serveries on campus. Two of them are too far away for me to even contemplate walking to at 7 in the morning, but luckily for me, the one that serves frozen mangoes every morning is not one of those. I’m pretty sure I’ve eaten mangoes for breakfast every single day for the past two weeks. I’m not really sure if that’s a good thing or a bad thing, but worse things have happened, right?
Plain Greek yogurt, mangoes, Justin’s Maple Almond Butter
Steel-cut oats topped with mangoes, blueberries, and Maisie Jane’s Crunchy Almond Butter (which, by the way Amanda, is fantastic!) with a side of scrambled egg whites

Egg white omelette (stuffed with tomatoes, onions, black olives, and green peppers), broccoli, strawberry and kiwi
Tofu with peppers and some kind of glaze, roasted zucchini and tomatoes, mussels (they were kind of a let down, but I guess the fact that we got mussels in the first place should have been celebration enough), and watermelon
Pork chop with sweet plum glaze, green beans, grapes
Portobello mushroom stuffed with spinach and ricotta, chicken marsala, cucumbers and peppers with hummus
Pork with mango glaze, zucchini fritter, asparagus, spinach salad with goat cheese, strawberries, and walnuts
Honeydew. Lots and lots of honeydew. (Like, at LEAST one serving every day. But usually more.)
Brownie–the edge pieces are the best
Tres leches cake (translated: “three milks cake”)
Carrot cake (translated: absolutely wonderful)
